COCONUT SHRIMP AND CORN CHOWDER


1tblsp olive oil
1 med yellow onion chopped
1 clove garlic chopped
1 1/2 pounds of potatoes diced
1 can corn
1 can of coconut milk
1 can of chicken broth
1 tsp cumin
1 tsp corriander
1 1/2 ts salt
1/4 tsp black pepper
1/2 pound shrimp peeled and deveined

Heat oil in a large saucepan over med. heat.  Add onion and cook till soft.  Add garlic, potatoes and corn and stir to coat.  Add milk, broth, cumin, corriander, salt and pepper.  Bring to boil.  Reduce heat and simmer until potatoes are tender.   Add shrimp and simmer until pink. 

*  you can add celery and carrots if you'd like which is what i did
